Potato salad has a huge fan. Its creamy, sweet and smooth potato texture and taste catch and hold people’s stomach and become one of the most popular salad menu.
Potato salad appears on my dinner table often, but I wanted to celebrate summer harvest with summer veggie, tomato. And I’m satisfied to make the dish tasty and also, cute. The dish add a little sour into salad, and it dues is refreshing salad for hot summer day!
Ingredients for 2 tomato cups
- 2-3 medium russet potatoes
- 2 medium tomatoes
- ⅛ large red onion
- 1 medium carrot
- Some parsley
- 2 tablespoon of mayonnaise
- Salt and pepper
- Cook potatoes
Washout the dirt of potatoes, slice and boil them in a medium pan.
- Chop carrots, parsley, and red onion
- Mash potatoes
- Make potatoes salad
Combine mashed potatoes, chopped veggies.
Add mayonnaise, salt and pepper and mix well.
- Tear some leaf lettuce
- Create tomato cup
Cut out the top part of tomato, and hollow out tomato seeds by using spoon.
- Stuff up tomato cup with potato salad
- On a plate, spread the lettuce carpet and put tomato cup potato salad on the center.
