Today, I’m introducing you all for fluffy egg over rice with savory thick sauce.
Well, some of you may say,
“Wait, are you trying to be a vegan? You shouldn’t eat eggs!”
Yes, you are right.
But for the beginners to be a vegan, it’s so hard to change eating habit so sudden. Also, this egg bowl is super tasty, so all I can say is “Well, it is not my fault, it’s egg’s fault for being so tasty!” 😛
- 1.5 cups of brown rice
- 2 cups of water
- 1 tablespoon of shredded ginger
- 1 clove of garlic
- 1 medium carrot
- ½ can of shredded bamboo shoot
- 3~5 shiitake mushroom
- 2 large eggs
- 1 bunch of scallion
- 1 teaspoon of sesame oil
- 1 tablespoon of soy sauce
- 1 tablespoon of sugar
- 1.5 tablespoon of wonton soup mix
- 1 tablespoon of vinegar
- 1 tablespoon of cooking wine
- 1 tablespoon of water
- 1 tablespoon of potato starch
- Prepare ingredients
- Cook rice by pressing start button or…
- Grill veggies
In a medium pot, put sesame oil and put flavor on the oil by adding garlic and ginger.
Then, add carrot, shiitake mushroom and bamboo shoot.
- Add water and ingredients for soup
Bring it to boil, and put mixture of potato starch and water to make the sauce thick.
- Beat eggs and cook egg
In a different pan, create fluffy egg.
Omelette style is recommended, but….well, for those who are like tanooki, you can just create scrambled egg!
- Set out dish
In a bowl, put cooked rice, and cover them up with eggs. Pour veggie sauce, and sprinkle some scallion and edamame.
