Mint Fried Rice

When I cook thai flavor of fried rice, I usually use basil to give it exotic flavor, but this time I wanted to have more refreshing taste, so I used a bunch of fresh mint.


As summer is here, you may want to escape from heat and be with nice chilling flavor. If you feel like Asian food today, let’s check it out! 😀



  • 1.5 cup cooked rice
  • ½ large king oyster mushroom
  • 1 large carrot
  • ⅛ large onion
  • ⅓ lime for juice
  • 1 teaspoon galangal
  • 1 small thai chili
  • 1 clove garlic
  • ¼ cup fresh mint leaves
  • 2 tablespoon fish sauce
  • 1 teaspoon sugar
  • Salt and pepper
  • 1 tablespoon olive oil



  1. Heat up pan and cook veggies
    In a large pan, put olive oil, galangal, thai chili, garlic and bring it to medium high heat. Add onion, carrot, mushroom and cook for about 5 min.

  2. Add rice and mint leaves

  3. Seasoning
    Pour fish sauce, sprinkle sugar, salt and pepper and splash lime juice.
