Chickpea Salad with Zesty Lemon Dill Dressing

One day, I was shopping at some Asian grocery. They sell veggies, sauce, snacks that appear in Asian cuisine or very reasonable price, so hitting Asian grocery is one of my favorite things to do.

 

But there was one thing I didn’t understand. That is, they sell huge bunch of dills.

 

Dills? Really?

They appear on some mediterranean dish, but they sell it here, as Asian grocery?

 

I looked up on internet and the truth was they use fresh dill for Vietnamese, Laotian, Cambodian dish. I have been to some vietnamese restaurant but haven’t tried dish with dill, so someday I’d try it!

 

So far, I haven’t found some Laotian or Cambodian restaurant, so for now, I thank the Asian grocery and use the fresh dill for mediterranean food.

 

Dill’s herbal flavor is good with refreshing lemon juice, so just mix with some chickpeas and make salad was the right decision for sure! 🙂

Mediterranean Quiche

Wow. it’s getting hotter and hotter day by day. But since I moved from LA to Seattle, it’s not that bad because it gets cooler every night here in Seattle, so my beautiful sleep is guaranteed every day;)

Mint Fried Rice

When I cook thai flavor of fried rice, I usually use basil to give it exotic flavor, but this time I wanted to have more refreshing taste, so I used a bunch of fresh mint.

Onion Salad with Salted Kelp and Sesame Oil

Hello everyone!

 

The veg I always stock on my kitchen is onion. I love it both as raw and cooked. While raw onion is spicy, crispy and good as a part of salad, cooked onion is sweet and the soft texture doesn’t disturb the taste of any dish.

 

I have shared some onion salad recipe, and here is the newest version!

Fresh veg salad become mild and refreshing flavor when they are mixed with sesame oil and salted kelp, so as same as other onion salad, this will be the best side dish for rich and juicy dish.

Coconut Milk Soup

If I and my friends decided to hit Thai restaurant and order some soup, we used to go for tom yum kung. The hot and sour soup always grabbed our attention and we always knew we made the right decision. Meanwhile, I knew there was another soup list of tom ka gai, chicken coconut soup. At that time, I thought it sounded weird because coconut milk was for some Thai curry or more like for dessert.

 

And, as usual for now, I knew I was wrong.

 

I tried making it at home because if I didn’t like it, it would be waste and this is what I don’t like to do in any occasion. Also, there is a benefit of choosing what I like to add, learning how to cook new recipe;)

 

And here it is! It supposed to have some chicken, but as I’m trying to be a vegan (please don’t mention about fish sauce..I don’t know what I can substitute with something vegan yet;P), I used veg soup stock instead and omit chicken from ingredients.

 

If you have coconut milk waiting to transform nice delicious food, try this! 😀
