Coconut Milk Soup

If I and my friends decided to hit Thai restaurant and order some soup, we used to go for tom yum kung. The hot and sour soup always grabbed our attention and we always knew we made the right decision. Meanwhile, I knew there was another soup list of tom ka gai, chicken coconut soup. At that time, I thought it sounded weird because coconut milk was for some Thai curry or more like for dessert.

 

And, as usual for now, I knew I was wrong.

 

I tried making it at home because if I didn’t like it, it would be waste and this is what I don’t like to do in any occasion. Also, there is a benefit of choosing what I like to add, learning how to cook new recipe;)

 

And here it is! It supposed to have some chicken, but as I’m trying to be a vegan (please don’t mention about fish sauce..I don’t know what I can substitute with something vegan yet;P), I used veg soup stock instead and omit chicken from ingredients.

Lentil Soup

I tried lentil for the first time in my life the other day. That means I spent quite long history without lentil. What a shame!

 

I found a bag of lentil at my grocery store and thought it would be great to try something new, so I looked up about lentil on google and decided to try as classic way: the soup!

 

Since lentil doesn’t need so much time to presoak, the method was super easy and you’ll get a nice warm bowl of soup in less than hour!

 

When you simmer the soup, let’s have a little debate for having bread, leafy salad, or both on the side!

Classic Minestrone

Do you know what’s the difference between tomato soup and minestrone?

One day I was looking up that and found many article states that if the soup contains a variety of veggies even without tomato, it can be called minestrone.

I thought minestrone was a tomato soup with a variety of veggies (celery is a must,) but just veggie soup could be called minestrone, so it made me surprise. While there are so many article about what makes classic minestrone, most of them said if the soup contains pasta with other variety of veggies, it would be that.

As looking back my school lunch, I had minestrone but it didn’t have pasta in it. It had celeries, carrots, onions, but no pasta for sure. So when I read the article, I learned I was eating tomato soup that wants to be minestrone someday.

I still doubt soup with lots of veggies and pasta is the one to be called minestrone, but anyway I made the “classic” recipe of minestrone.

With a variety of veggies, mushrooms and even with carb, this is the easy and complete meal for just a bowl:)

Asian Flavored Corn and Egg Soup

Usually if my main dish is Chinese food, I pair up with wonton soup without wonton but with seaweed and scallion. (Sounds a little Weird?;) ) But as I was making mapo tofu, I wanted to try something different. I’m craving food so much lately, so I choose something can stock up my tummy: cream corn!

I think I used to have it in my school lunch, so creamy sweet corn and egg with savory flavor of sesame oil caused nostalgia that night.

Asian flavored corn soup. If it hit your mind, your tummy wants that so cook it right away!

Broccoli and Potato Soup

Hello there, welcome to my new posting!

I heard LA reached over 90 degree on thanksgiving. Some of you may feel it’s incredible temperature in November, but it sometimes occur. When I was in LA, I enjoyed that very much, and now I miss there so bad…where is my sunshine and great nap time on the beach!?

My local is getting colder and colder, so I need another soup to warm my body up.

If you live in real winter, you got try it. Broccoli and potato fill your stomach and they will keep your full body warm even though they already pass on your stomach! 😛
