Eggplant Banh Mi

When I was craving Vietnamese food, I only thought about rice dish since Vietnam is one of the Asian country, and never thought about bread as their cuisine. But, when my friend recommended me to try Vietnamese sandwich, I was totally obsessed for the sandwich.

They had crispy but fluffy and chewy texture on bread, and the combination of the bread and veggies made the great harmony.

Today, chef tanooki would like to introduce eggplant Banh mi.

You’ll be totally obsessed when you have the first bite of this Vietnamese sandwich.

*Used eggplant instead of meat to stay healthy!
